  • 1 tsp butter (3.5g)
  • 1/3 cup egg whites (75g)
  • 1 tbs finely chopped red pepper (10g)
  • 1 tbs finely-chopped spinach (3.5g)
  • 1/3 paper-thin slice of proscuitto (5g)
  • 1 tbs cream cheese (15g)
  • 2 slices fresh bread (60g)
The one and only Egg McKidney. A great way to start your day with a low phosphorus protein source. Fifteen grams of protein, for the cost of only 100mg of phosphorus - it's a bargain!

STEP 1: Heat up the butter in a small skillet until the butter bubbles.
STEP 2: Add the egg white and vegetables.
STEP 3: Fold into an envelope, like an omelet.
STEP 4: Spread the cream cheese on the bread, and assemble the sandwich as shown with the prosciutto.
STEP 5: Grill both sides, covered, on low heat.
STEP 6: Cut and enjoy - it's a beautiful morning.
