Egg White Quiche
  • 1/2 cup flour (70g)
  • t tbs corn flour, finely milled (15g)
  • 1 tbs margarine (20g)
  • 3 tbs water (45g)
  • 1 1/2 cup egg whites (325g)
  • 1/2 cup cream cheese (100g)
  • 1 tbs butter (12g)
  • 1 cup chopped cauliflower, packed (125g)
  • 1 large green onion (18g)
  • 2 medium mushrooms (50g)
  • 1/4 peeled pickled red pepper (25g)
  • 2 tbs soft goat cheese (30g)
Egg whites have a special place in the renal diet as they are a rare combination of protein and low-phosphorus content. Makes 4 portions.

Try the variations below:

  • Custard with substitution of garlic and herb cream cheese with spinach and/or broccoli filling, no garnish
  • Custard with substitution of dill cream cheese and 1 slice chopped smoked salmon, brush the cooked quicke with melted butter and garnish with poppy or sesame seeds
  • A filling of two tbs finely chopped bacon, 1/2 tsp dry mustard, pickled red pepper, fried onions, garnished with 2 tbs finely grated cheddar (optional)
  • A filling of five sauteed mushrooms, finely chopped, garnished with 2 tbs finely grated Swiss cheese or Jarlsberg
  • A filling of one sauteed asparagus, finely chopped, onions, garnished with 2 tbs finely grated Swiss cheese or Jarlsberg

STEP 1: Prepare your ingredients.
STEP 2: Mix the flour, corn flour and margarine in a bowl with a fork until coarse and crumbly.
STEP 3: Add the 3 tbs of water and mix, one tbs at a time.
STEP 4: Press on the bottom of a greased pie dish without covering the sides, and REFRIGERATE.
STEP 5: Cream the cream cheese slightly, then add the egg whites a little a time and incorporate. When the mixture is liquid, you may add the remaining egg whites at once.
STEP 6: Heat up the butter in a frying pan, and fry the cauliflower and the mushroom. Salt and add MSG to taste, it helps draw the water out of the vegetables.
STEP 7: Fry until golden and shrunken.
STEP 8: Add the green onions and red peppers, fry for a minute.
STEP 9: Take the pie crust out of the refrigerator. Add the vegetables.
STEP 10: Pour the egg white and cream cheese mixture in the pie plate.
STEP 11: Garnish with goat cheese crumbs.
STEP 12: Bake at 325F for 40 minutes.
STEP 13: Serve with salad or raw vegetables.
