Joyful Fruit Salad
  • 1 cup cubed pineapple (160g)
  • 1/2 cup fresh blueberries (115g)
  • 3 cup medium cubed watermelon (450g)
  • Juice of one key lime (6.5g)
SPECIAL CONSIDERATIONS:
This recipe uses those tiny key limes that taste like candy, and are sold in small bags. Ordinary lime would be too bitter - if you can't find key limes in your market, simply omit. Such pretty colors, fresh and tangy! It screams "vitamins!" Makes 8 1-cup portions.
