Pork & Napa Cabbage Dumplings
  • 1 lb ground pork (454g)
  • 2 cups chopped Napa cabbage (150g)
  • 1 green onions (8g)
  • 1 tsp fresh chopped ginger (10g)
  • 2 tbs mirin - optional (35g)
  • 1/4 green pepper, peeled (35g)
  • 1/4 sweet onion (30g)
  • 3 tbs cornstarch (35g)
  • 1/2 tsp salt (2.5g)
  • 32 wonton wrappers (175g)
SPECIAL CONSIDERATIONS:
Prepare ahead and freeze, making sure they do not touch until completely frozen.

STEP 1: Prepare all the ingredients.
STEP 2: Chop all ingredients except the pork and the wonton wrappers at high speed in a food processor.
STEP 3: The chopped mixture should look like fine coleslaw.
STEP 4: Add the pork to the food processor.
STEP 5: Chopped until fairly smooth.
STEP 6: Drop a teaspoon of filling on each thawed wonton and fold like a turnover.
STEP 7: Freeze for 3 hours without the stuffed wontons touching.
STEP 8: Steam for 20 minutes straight from the freezer.
STEP 9: Serve with plain rice and a dipping sauce made of 1 tsp sugar, 1 tsp vinegar, and 1 teaspoon sambal olek or other oriental flavoring.
