Spinach Goat Cheese Egg White Omelet
- 1 tsp butter (5g)
- 1/2 cup egg white (110g)
- 1/3 cup chopped spinach (11g)
- 1 tbs soft goat cheese (8g) (can substitute cream cheese)

Heat the butter in a frying pan (non-stick is best for eggs).
When the butter bubbles, pour the egg whites.
Measure the spinach loosely packed in the cup.
Add the spinach, and the goat cheese in small clumps.
Fold over once as shown.
Fold over again to form and envelope.
Turn over and cook the other side until golden.
